Easy Low Point and High Fiber Apple Muffins

I make this recipe into 34 mini muffins. The mini muffin pan I use doesn't make tiny muffins, but they are smaller than regular size. I am sure you could make regular size muffins and they might still be one point, I just happen to like my new muffin tin!

1 box of Krusteaz FF Apple Muffin Mix
1/2 cup unsweetened apple sauce
1/4 cup apple butter
1/4 cup eggbeaters
2 tsp baking soda
2 cups of wheat bran (bulk from whole food store)
1 cup of water

Blend together and bake at 400 degrees for approx. 20 minutes.

1 muffin = 1 point
